My biggest complaint about 11x14 is the expense of film holders.

Otherwise a Burke and James 4x5 press with a Zeiss Tessar can be had for under $100 usually. Great cameras.
I use a Pantar set with no shift as well. No Artar that I've owned has ever exhibited the the tendency either.

I only contact print, so I make the choice up front as to what size I want my final print to be: 5x7, 8x10 or 11x14. Thus in my case a big print is not...

I use plain old white kitchen garbage bags to keep dust out. They don't last forever, but they're cheap and effective and are big enough to accomodate 11x14 holders.
I do. Doesn't usually help technically. I inhaled last week just before taking a lovely rushing water shot...with my pack in it. I don't do stupid crap like that when I'm not stoned, but it does...

My old f/9.5 was labeled 6-1/4" Extreme Wide Angle Velostigmat Series III. I don't think the WA vs. EWA rule can necessarily be trusted. Mine was uncoated in a #3 Betax.

I got tired of breaking rods, so I use a Richeson 9010 for pt/pd as well. I do, however, use a hake brush for speading gums (and a real cheap ass synthetic to smooth it) and cyanotypes.

Add a 5x7 back to your 8x10. It's much cheaper than going ULF and a mighty versatile format. (I bought an 11x14 after 8x10, but I still shoot about 40% 5x7 vs. 59% 8x10.)
Double Exposure Volume I would be a great gift. Text printed in letterpress and photographic works entirely dedicated to historical processes.
I agree with Andrew. Any of the dichromate processes is pretty gentle. I'm currently advocating gum for its flexibility and lack of expense, but environmentally it's about as good as it gets.
