I use Minor White's method: Listen to music; read poetry; think deep thoughts about light and shadow; think about someone you love; put Zone system at 7-9 levels instead of 12; and have a long discussion with someone about the potential image.
Then, wing it.

Most of my work is in my home still life studio and is affected by*bellows factor, reciprocity failure and guesstimated multiple flashing, so my method is best guess and then process a sheet and go from there. However out in the world what ever camera I use I want to know what is the necessary exposure to get shadow detail. A spot meter is the best way to measure the dark areas. If the bright areas are too far out I say oh well forget it.
