There is thread here somewhere about photographing "nothing". It might help.
It is not just "difficult", Ash... but IMPOSSIBLE to photograph someone if they don't show up!
Maybe the Impossible Project will come out with an instant film that features pre-visualized subjects in the film itself.
All manufacturers should pre-fog their film with an adequate image, just in case.

I've had some great experiences with models from there, but a few too many to sour my disposition in general unfortunately. I might try it again though...
I've never paid someone to shoot(just TFP/TFCD), we just met in person at Starbucks or somewhere public, I showed my "portfolio", and agreed if we wanted to shoot. Easier than wasting time setting up, location,etc... and then finding out they aren't into it. It allows me to "pre-screen" people too before shooting, if we haven't worked together before.

Here is a photo of "nothing", that I shot recently. I could call it High Noon at the South Pole on June 21st. Actually inside of the darkslide. Light arc is dent in neg left by the lab that developed the film. It does help to remove the darkslide before triggering.

Dan it was someone I 'knew'. An acquaintance I'd met a few times and even photo'd quickly once. Separate to the dating...oops...modeling sites.
At least they don't show up and run away when they see you, like what happened to me last week.
Or, like another one recently, she listed off all her STDs as we were shooting .22s into the lake in between picture-taking. It's hard to look em in the eye when you know their panties are full of pus.
