I've got very nice images with my Nikkor 240 mm W wide open.
12" Wolly Velostigmat in a studio or Betax #5 shutter. At 4.5 on a 10x8 it is wonderful. See Jim Galli's site.

I've got a 12" Gundlach Radar with an aperture of f4.5 (in a Betax #5, like steve) that seems to do pretty good! f4.5 is pretty fast for an 8x10 lens! How far away to you plan on focusing?

That's the point... around 3 to 5 meters in sunny places... i will probably use a 6x neutral filter to do it !
The think is that i want very limited dof... but i want sharp details to be very sharp !
Similar to Zeiss-contax lens in 35mm.
You may want to take a look at some of the older brass lenses as well, some of them are quite big around! I don't know much about them yet (just getting into them myself) but I've seen some in the 300mm+ range with good sized apertures! Some of the brass lenses seem to have a very nice look to the blur!
I use ND filters during the day as well, to keep shutter speeds down when I want to shoot larger apertures.
