Do 5x7" backs come onto fleabay at all? Have any of you seen any?

There have been several on eBay in recent months, but always as part of a kit with the camera and other backs.

I was afraid of that..... And lens boards, you would probably have to cut em out of sheet metal....

You could, although IMO one of the most prized pieces in a good Rittreck kit is a Technika board adapter. I'd rather have one of those, even if I had to have SK Grimes fabricate it, than a bunch of straight Rittreck boards.
