What resolution do you usually use? This might make a difference as to what a suitable replacement would be. For example, if you scan at 1800dpi or less, a used Microtek might be the ticket.

The V700 has two lens also. That's NOT the difference between it and the V750. I think V750 has the wet mount holder and may be a better version Silverfast Ai, for those who use it (I don't)
Doesn’t the V750 also have anti-reflex coating somewhere?
EDIT: Seems that yes it does.
Make sure the carriage lock isn't engaged/partially engaged.

When my 4870 died, I punched it and tossed it in a box. A year or so later, I decided to check it before throwing it out for good. It came to life and has worked fine since then.
Anyone here got any advice for my issues? I can turn on my v750, but when I launch Epson Scan it crashes.

maybe an uninstall and re install - just watch out it may not remember what defaults you had - i updated epson scan a while back to the latest version and was blindly scanning away - the gamma was 1.8 and it was saving as jpeg ! doh !
