This Mammographic xray films are only single sided.
Fuji UM-MA
Agfa HDR C Plus
CEA CA-Plus
The Carestrem MIN-R-EV films are douple side coated.
Standard xray films for medical or technical works are all douple side coated.
Some Agfa films for nondestructive testing is one sided. Their labels show the notch code.

8x10"? Not easy, I know this film only in 18x24cm and 24x30cm
Otherwise you can cut it out the 24x30cm sheets.
Can be done under red light. I cut my 9x12cm sheets out of the 18x24cm ones.

Here I buy my xray films.
It is not so easy to find sellers to give this film to private customers.
Maybe someone has an other shop in Europe?

Does it matter much if its coated on one or two sides for contact copies though?
I find it very difficult to develope the douple coated films, I always getting a lot of scratches on one side.
Single coated sheets are much easier to handle.
I tried a few sheets of the cheap CEA douple coated films and the reasults are very sharp, the grey scale is great but the rear were scratches. I stamped it away but this is a silly job.

Doesn't help on your pursuit of a single sided but I shoot Agfa Radiomat Full speed blue 8x10. I cut some sheets down for my 4x5. With both sizes I have hangers and thats helped tremendously on the scratches. Using Pyro staining developers has helped some but doesn't remove it altogether. I got some Kodak hardening fixer I intend to use when switching over to D23 as my developer. Ive seen where people will use bleach on a paper towel on the non exposed side to remove the emulsion which would help for that but have yet to try it though I've seen it done.
