I pretty much follow the same procedures as Lee using Epsonscan 64 bit Windows 10 scanning on my V600 and currently my V850. I scan at 2400bpi, 16 bit color or 16 bit gray scale, adjust the histogram levels but no other settings. No sharpening during the scan. Sometimes I'll use ICE but usually not. I leave the scanner at 2.2 gamma. I save scans as tiffs. I now use Lightroom Classic V6 for post-processing the scans. The first thing I do after the scan is to remove the dust spots. Then I do all the other adjustments.
