It's been a while since he last checked in here, but Gabriel Benaim (http://www.gabrielbenaim.com/) was working in 8x10.
There was also a Rabbi on the Forum who produced a beautiful book of Jerusalem landscapes; I wish I could remember his name, sorry.
The books were available last year in the For Sale section.
When I lived there in the late 1990s it was very difficult to find bulk chemicals specific to photography. Bottled or bagged developers, fixers, et cetera were available but expensive, so I ended up bringing most of what I needed with me from the US. I imagine that chemicals and film are even harder to find now.
Thanks. yes, I know Rabbi Sinclair -- His work is amazing--I don't think he shoots large format, though...
check out Vision gallery in Jerusalem, by photographer Neil Folberg, he uses LF: http://www.visiongallery.com/ if he's there he can tell you where to get stuff in IL.
and for shops go to "Jugend", 5 Ben Yehuda St. in Tel Aviv
hopefully they still have some stuff for alternative, chemicals, etc.
