Don't think there ever was such a thing as a 5x7 graflok back. Spring back yes of course. What accessories would you use with a 5x7 graflok anyways?
From graflex.org, like domaz wrote, no evidence of a 5x7 Graflok back:
The 5x7 Speed Graphic, when supplied with "Graphic Back," accepts Century Riteway film holders and the Kodak film pack adapter [obsolete]; with "Graflex Back" it regularly accepts Graflex film and plate accessories.
Do you mean a 4x5 reducing back? I have a standard 4x5 graflok back screwed to an appropriate plank for my 5x7. You could buy one on ebay and make the wood part yourself.

Buy a regular 5x7 spring back, and cut/adapt it to fit. It's MUCH easier and safer than trying to make one
I agree, Burke & James 5x7 backs show up regularly on eBay. You may have to be patient, but it would be much easier in the long run.
The type of back you have takes special folding holders as I recall. You may be able to find some. I THINK the Russian 13x18 FKD camera used those, but I'm not certain of that, nor that if they are the same type, that they'd work directly in your existing back.
