What size of mounting board should I use for 5X7, 8X10 and 11X14 prints?
Personal preference, really.
Depends if you want to:
1) stay with "standard" sizes for cheaper ready-made frames.
2) minimize wall space taken up or maximize "breathing space" around prints
Me: (first is smaller for informal gifts, the latter is for a more formal presentation)
5x7 = 8x10 or 11x14 -- 12x16
8x10 = 11x14 -- 16x20
11x14 = 16x20 -- 20x24
Best bet is to draw the hole size within the mat size to scale (I use graph pape) -- or just lay the print on different sizes of paper to see which strikes you as the best (not what us odd-ball group of forum folks think is the best!LOL!).

Just measured two prints I have handy -- both Platiniums with a little black showing around the print (hole slightly larger than 8x10).
Horizontal -- top about 3.5", bottom 4"
Vertical -- top about 4", bottom just under 6". This print might be a little high. With verticals, I like to put a bit more weight on the bottom. Perhaps 4 1/4 and 5 3/4 would be better.
When hanging the frames on the wall -- a mix of H and V 8x10's on 16x20 -- I like to keep the center of the both the H and V images at about the same height off the floor, but the center of the V frames slightly lower than the center of the H frames. Just a personal preference of how the framed prints look on the wall.
