I have a 90mm and a 75mm for my 4x5.
To my surprise the 90 sees much more use.
When using small format I’m a big fan of the 21mm, but I have found that when a tripod is involved I like to set up a bit further away from the scene and prefer a 90mm.
I am one of those who find that a center filter is not critical with a 90mm.

I've found that falloff is more noticeable on some shots than others even with the same lens and even with shooting color or BW. I don;t know why that is.

It could be the f-stop you are using on the lens.
