I saw Chamonix makes them. They aren't cheap. They look nice though. Is there anyone else? I checked the big online retailers.

Shen Hao - Badger Graphic offers them, see also the Shen Hao website.
Don't know if Lotus is still active, or if they make 5x7.
You might be able to commission Richard Ritter.
Doesn't look like Alan Brubaker is still active at this point.
Shen Hao is slightly less expensive than Chamonix, Lotus tends to be very expensive, and custom-build won't be cheap either.

Isn’t there an almost equivalent metric size? I bought some NOS Fidelity holders years back and the box had the metric size crossed out with 5x7 hand written on it. I had to load a sheet to make sure if it was the correct holder.
13x18 cm film is slightly larger...5x7 film is too loose in a 13x18 holder.
With regard to modern holders, the outside dimensions are the same, so they will fit in 'modern' cameras.
5x7 and 13x18cm film holders are interchangeable in camera as the external dimensions and distance from film holder frame to sheet film holder plate are identical per spec.
What is NOT interchangeable is sheet film. They are sized different and are NOT interchangeable.
This question of new film holders brings up the need to take care of film holders in good condition.
