I've no experience with the Apotal, but Apo lenses in general are IMHO pretty frugal when it comes to image circle. If the 300mm Cooke does cover 8x10 its a safe bet that there won't be much if any in the way of availble movements without vignetting. Many Apo process lenses do exhibit outstanding performance in other areas though. A conservative approach is to think of using APOs as long lenses, where they'll provide the opportunity to use greater movements. OTOH, my elderly 14" f/9 APO Artar does a very credible job on the 8x10 with some room for movements, at least enough for landscape work. YMMV

According to the ever useful (but sometimes wrong) Vade Mecum, your lens is a Tessar (4/3) type lens. If this is so it should cover 8x10 with good to modest movements.
Um, Jason, for a change the VM is right. I have a 30 cm Apotal and it is indeed a tessar type.
But since I don't have a large camera I have no good idea of its coverage. By the "image on the wall" test, it probably won't cover 8x10. This is consistent with Nikon's extremely modest claimed coverage for tessar-type (they say asymmetrical) Apo-Nikkors.
