Lots to consider here. One big difference might be the portability of your next camera. Many backpacks won’t fit a 11x14 camera but the narrower dimensions of a 7x17 might. Just a thought.

I once switched to non-RS TMax developer for sheet film due to difficulties getting RS. Even with distilled water I somehow managed to get dichroic fogging.....YMMV

Lighter fluid might free it up in the short term....I've used it in an emergency on a Synchro-Compur. Run a drop down the back of the cocking lever and try to work it.
