Probably dumb question, but you calibrated the monitor, right? Otherwise sounds almost like an issue with the grey-scale inks, assuming it's not a calibration issue. Could it be those channels...
Oh - I should also point out that there are huge differences in travel weight with MF cameras. So, even there you have a lot of pluses and minuses to weigh.

Exactly. On a good day, I feel like I can get 8k by 7k of useful pixels out of a frame of medium format film. If that's all they can get out of 8x10, then something seems seriously amiss.
I saw the article as well. The 8x10 film in this comparison was:
