What on earth possessed them to make two completely different backs for their cameras? I understand the differences in the different functions, but why didn't they just put springs and a GG on the Graflex size back for the Speed?

They did. Later they introduced the Graflok back.

Huh? Ian, I have great difficulty seeing the Graflok back as an improved Graphic back.
Graflex back; no ground glass in back such as used on early SLRs. Film holder slides in like a lensboard. ground glass was at bottom of chimney instead.
Graphic back; speed graphic back with leaf springs
Graflok back; removable contemporary back.
