scanning negs of high key subject

Can anyone suggest how best to scan 4x5 negs, where the subject is white on white walls with just a little tonal difference, under exposed and over developed for a lovely soft tonal print in the darkroom. When I scanned the neg however it comes out horribly harsh and grainy. Epson v750 scanner used.
    Thank you.
