Hey NB,
I'm across the country, but if you're in the market for a wood field camera, Ebony is the best. You won't have a problem buying "blind", I did on the recommendation of another user, and I'm still packing that camera years later.
I prefer the ebony wood for beauty and durability, but mahogany generally saves a pound in 4x5.
