Not every vacuum is really loud. Shop vacs seem to be the worst for noise. Ive used some of the older floor models that had pretty good sound dampening in them. It never hurts to have a little extra vacuum, you can make a dump valve pretty easy to control how much vacuum you actually get at the easel.

Even a 30X40 inch vac easel needs very little vac draw if the easel itself has been sensibly designed, and is not some pegboard atrocity. Shop Vacs blow dust all over the place. I'd never use one of those in the same room, only via a hose through the wall, remote control, and a bleeder valve to lower pressure.
