The Schneider 110mm f/5.6 Super-Symmar XL is an excellent lens for going wide, but not ultra wide, on 5x7. Not inexpensive, but it is superb.

A 90mm Super Angulon is my normal wide angle for 5x7, but I have used a 75mm Nikkor-SW occasionally with the knowledge I'll have fall-off to compensate for later.
Vintage small options include....: 108mm W.A.Dagor (so-so on color) 104mm WA Raptar, 100mm WF Ektar, 108mm Cooke VIIb (usu. needs to be front mounted into shutter).
I've tried all of these, but am now using more modern 75, 90mm and 135mm lenses instead, largely due to shutter reasons, not glass performance and when I don't really need the small/light advantage.
