Scanning Kallitypes, Van Dyke Prints, Etc.

I'm experiencing weird color shifts and graininess that are not evident in the prints themselves. I have an old scanner, a Canon Canoscan 8800f. If you look at the attached picture of the trees, for example, you will see a white "snow" that is only faintly visible in the print, but which has been magnified in the scan and which looks horrible. I've tried playing around with the settings to no avail. Do I need a better scanner?

For scanning similar alternative process prints, I use cross polarization. 2 LED lights at a good distance from the print. Old Polaroid 12"x12" Polarization filters over the lights. Nikon D850 with a polarizer in front of usually a 60mm or 200mm Macro Nikkor lens. Lot of my older Lith prints developed a metallic/reflective sheen in parts of the shadows. Using a flat bed scanner was fruitless and only seemed to enhance them. Using cross polarization completely removed them.
