    Have you considered a Kodak Master View?

    I only a Canham 5X7, and a Toyo 8X10M. I like both cameras, but in terms of stability, the Canham doesn't hold a candle to the Toyo. the 8X10 and the 5X7 Canham models are identical in design. They have a rather interesting folding pattern that take some getting used to. But once you do, it's no big deal. I will say, however, if I could get a 5 x 7 the bellows extension of the Canham and the design of the Toyo, I would be one happy puppy. If I was to purchase and 8X10 today, knowing what I know now, I probably wouldn't buy either one. I would call Richard Ritter and ask him to build me one.
