After a bit more digging it seems the pro Epson printers I have looked at use 3 different inks:

Epson UltraChrome K3/HDR (sold with P800?)
Epson UltraChrome HDX (as sold with the P5070)
Epson...

Are you suggesting standard Epson inks that come with the P800 and possibly P900 will not work for digital negative printing out of the box?

Yes, the datasheet does not give a simple formula to apply to times over 100 seconds, thats why I calculated the original conversion back down to 100 seconds.

Haven't heard of 'bellows factor',...

So will try:

f 25 @ ISO 80 = 100 seconds x 16 = 1600 seconds = 26.6 minutes

Fair bit longer than the 3.2 minutes I tried first.. :p
