I can strongly recommend the Magnum course. It's about approach and mentality, with some really good thoughts on generating and maintaining a project, narrative sequencing and pacing, and what goes into the making of top-end photography books. It of course helps that the majority of the work shown and in progress is on 8x10: a lovely Ebony indeed.
The course workbooks and links to other discussions, videos, and articles, fill it all out very nicely.
Nothing whatsoever on technique or gear other than what 8x10 brings to the party.
