Possible but clumsy and probably counterproductive expense-wise. They offered a separate E enlarger for 5X7. Durst L138 is the most common variety of 5x7 enlarger, but in an entirely different league from Omega; and I don't know if you could easily find either an Omega E or Durst there.
Possible to build enlarger head chassis with new machined parts, but a lot of design and machining, longer bellows, neg carriers, but would still need an entirely new light head...
Might be easier to get or make a large copy stand, use the camera for the enlarger body, but an add-on light head and neg carrier...

On a budget? Elwood is your friend.
The budget, around s1k to 1,5k.. will depend on the offers in the market.
Another point that is within my budget is that you must bring it to South America. It has its cost.
The 4x5, omega d2 with litre head, the heaviest thing was the head transformer,
And who is the friend,

Once you get the Omega you will have to do some trial and error to see how low you can have the lens to both focus your smallest print and also have the image clear the 4x5 cutout where the old negative stage was. Once you figure this out, you will then be able to construct a box of appropriate height, to fit on top of the existing negative stage to house your new 5x7 negative stage. Then supply the new negative stage with a 5x7 light source and you are done. You might need to add an additional counterweight spring, but maybe not, depending on your electrical aptitude, as a 5x7 LED head may be constructed to be lighter than the 4x5 condensers.
I've converted a couple of Beseler 45M to 5x7. Not hard if you are handy with wood. Bellows stay the same. You'll need a bigger light source. I'm not that familiar with Omega.
A big headache with an Omega. Nearly all of it would need to be reconfigured.
