I mainly shoot B&W too but use a DSLR or roll of Portra once in a while.
I think that's a good start. The last two are good balances of color and use color to be interesting. The first two I don't think need color and perhaps shows your B&W background. The first could easily be a squared B&W shot; It'd look nice in B&W with the gentle lighting on her face and the bright sparks. I guess crawfish are acquired taste. Is the photo about the color or the texture/shapes/mood? I think it's the latter and you say you were excited but it does not show? It shows the B&W background you've been practicing; color might not be necessary. Dark texture/shape/mood can be done in color for sure though and it's a good challenge but easier for me in B&W.

I guess I never thought about why I was shooting color. with the cherry blossoms it's obvious, so much color. You're right about the other two. The crawfish are part of a larger series of documentary photos, so maybe it's better in context, though it could have easily been b/w

That second one seems sort of mad max or death race 2000 inspired to me. I like it's composition better than the others.

Maybe a mix of Porter influence and something a tiny bit more abstract. Monhegan May 2015 with the rolleiflex and portra 160.

Also at Monhegan, this just shows the energy of the place. It's windy and bright and exposed and the trees show it. Waves show it too, but not in this photo.

+1 : Lovely shot. Mamiya C-series lenses are not to be sneezed at. I moved from Hasselblad Zeiss glass to Mamiya-Sekor (long story), and find the results fully acceptable.
