Funny thing is that when I first started to collect and use straight razors, some twenty years ago, I built a seven day set of those Thiers Issard Eagles. Only recently, after honing for all that time, have I got to the point where I can do them justice and use them most days. Truly hard steel. More than enough to peel an apple:
