I have two different processing times for Kodak T-Max 100 Professional 4x5 sheets in a Jobo Processor. For example one page I downloaded states a time to develop Tmax 100 in Tmax RS 1:9@ 75F for 12 1/2 mins(tech pub-4016) the other sheet states T-Max RS 1:9 @ 75f for 10 mins. (tech pub F-32)

For xtol 1:1 is states @ 68F 9 3/4 mins and the other is 7 3/4 mins.

Which tech publication should I follow?

F-32 is obsolete. It was replaced by F-4016 when the formulation of Kodak B&W films was tweaked with the move to a new production facility in 2007.

In any case, those recommendations are starting points only - you may find that you need to adjust them to get negatives that suit your taste, printing habits, etc.
