I'm going to be mounting a few Cyanotypes in the near future. These will be traditional blue and some stained brown (Tannic Acid). What coloured matting is preferred for mounting these prints?

Whatever you think looks good. White if you can't make up your mind -- no one was ever fired for using white matt-board!

For the stained ones a just off-whiteboard. Be careful though that it is toward tan not yellow which is the case with some boards.
For the unstained ones, white makes the blues really pop.

i prefering universal black
maybe try use any white space between picture and matting...

also depends on how dark / bright prints you have

For Cyanotypes you'll want to use acid free but unbuffered mat board. I think that is going to limit your color choices to white. Calcium Carbonate used to buffer most mat board is not good for cyanotypes.
