I am wondering if a 6x12 graflok style back can be used on a sinar. Or if only sinar style 6x12 film holders can be used. Thanks

My Sinar F has a Graflok back so I can use a 6x12 graflock holder.

The sinar back frames have Graflok sliders. So you can use many Graflok roll film holders on sinars. But the frame has some protrusions the Graflex original did not have - at least on the various metering backs. There are some holders where knobs, levers, hinges or the dark slide jam against the frame, so you'd better ask for practical experience with specific backs.

That said, the Sinar Vario and Zoom are hard to beat in planarity and convenience...

Sinar 4x5s have standard 4x5 international backs which accept a variety of accessories including the Horseman 6x12 roll film holders, Polaroid and Fuji 4x5 holders and the Sinar Zoom roll film holders.

Personal experience: The following image was made with a cheapie Shen-Hao 6x12 holder (Graflok-style) in a Sinar F back:

And this image was made using a Sinar Vario film holder set for 6x12, in this case using the Graflok tabs which that holder supports in addition to sliding under the ground glass:
