How would one go about finding out what coverage their lens has?

I have a 210mm that I use on my 4x5 and wonder if would work on an 8x10.

Manufacturer's datasheet will be the first place to check. Otherwise there are some big databases on the net.

Trial and error is the gold standard, as there is no universal agreement by the manufacturers as to where the circle edge is.

Find a dark room with a window and point the 4x5 out the window and focus on infinity. Then take off the 4x5 back and hold an 8x10 size area marked on a white foamcore board behind the camera moving the board back and forth till you have a sharp image on the board.

Before you embark on your dark room window experiment journey and if your lens is a newer type make yourself a favor and google it out...

If it's a Nikkor W 210, it'll cover 8x10 but with no movements.

I have a Schneider-Kreuznach Symmar f5.6. It's convertible to 370 f12.

Oh, also, this lens came with the Calumet 4x5 I bought about a year ago. I've been happy with it for the portraits I exclusively shoot but, should I be considering something shaper? I know the glass is always greener but and ignorance is bliss but, if this lens is a dog, relatively speaking, I'd like to know so I can consider something else. Thanx.

If I remember correctly it has a covering power of 295mm stated from Schneider, but mine just covered 8x10 at f 32
So it is not really usefull on 8x10!

Because you're so cute - your lens covers 297mm at f16. Hence it doesn't cover the 8x10 format.;)
