This may sound like a dumb question but here goes:

I know you can refrigerate film, even place it in a freezer but what about photographic print paper? Can it be kept in the frig (not frozen)?

I have some Epson premium luster photo paper that's unopened and I don't anticipate using it for awhile.

I have never heard of storing Inkjet paper in a refrigerator... can't see the need

You are confusing Photographic Paper (silver halide) with printer paper.

Refrigeration prolongs the life of heat and light sensitive silver gelatin paper.

No need to refrigerate inkjet paper.

Just store it in a dry environment.

OK - I wasn't sure. I live in California's central valley and it gets pretty hot here some times - But Gem Singer is in Texas, so it must be OK as long as its in a dry place.
