OK, so am I missing something here - are the older Linhof tan one piece reflex finders for view cameras only good for using in the vertical format?

No, your'e missing nothing and yes, the first reflex finders was only for the vertical format. Soon Linhof improved the reflex finders, also tan, to use it in the vertical and horizontal format.

I must admit, I can't see why they would have made it that way..
Did they ever make a two piece finder for the 5x7?

Pictures of Shelby Lee Adams show him using his Linhof at eye level in the horizontal position, viewing the GG through the reflex finder from the side.
Personally, I'm unable to compose through the 2-piece finder (not enough distance from the eyepiece to the GG, although it works fine for a 6x9 roll film crop.)

Did they ever make a two piece finder for the 5x7?
Both, one and two piece finders, where made for 2x3", 4x5" and 5x7" cameras.

The latest pictures that we have for the 57 Linhof Reflex Viewer shows that it is one piece. The 23 and 45 have been two piece for many years.
