At the lovely evening the other night at Rob Skeoch's (Big Camera WSs) in Burlington Ontario, a fellow showed me a lovely Azo in Amidol print that was then sepia toned (but not bleached, just placed in toner). Can someone tell me the sequence here? Tone, then fix or versa vice? Thanks!:)

As far as I do it, fix, wash and tone only after the normal wash sequence. I use Moersch´s carbon Rapid toner which is easy to use and nice on AZO 2 when I want browner tones. Using a real sepia toner, you may want to interupt the toning by using a rapid wash rince to avoid the print from carry on toning in the wash.
