Yes. Single coated.

That may not be 100% accurate, but the 121 SA is a special case: It was replaced by the 120 SA before MC was introduced, so they are all single coated.

I can't say that I've ever had contrast or flare issues with my c.1963 121 SA. A fine performer on 4x5, if a bit large and heavy.

I was told this by a Schneider LF technician, when I was deciding on what lenses to get. I decided on Symmar-S and wide angles from the mid to high 1970's.
By the way, I have one of the later model 121 f8's and like it a lot.
Interestingly, I was told by a different Schneider LF technician that there were some f5.6 models made. (It was either a 120mm S.A. or the 121mm S.A.) I've never seen one, though. He implied that they didn't sell well.

I have one of the technika 121 f/8 SA's and it looks to be single coated. Rather large lens, but it will also cover 5x7 with some movement.
