My Arca Swiss 6x9 arrived today. Everything seems to be in working order but I have no idea how to keep the shutter open. The only way I can see through the lens is by using the 'B' mode and hold the trigger.

How does one normally keep the shutter open?

Take a look at the round button on top. See if it could be press down. If it could, you have a Compur press shutter, the little round button will keep the shutter blades open. Cock the shutter first before pressing the button.
Also take look at this link,

"The only way I can see through the lens is by using the 'B' mode and hold the trigger."

That may be the only way to do it, though you can avoid having to manually hold the "trigger" by using a cable release that will stay in the "down" position when you turn something or push something (most, maybe all, cable releases allow that to be done). Then the cable release in effect is holding the trigger and your hand is freed up for other things. However, you might see if there's a small serated metal piece somewhre on the circumference of the shutter that can be moved back and forth. If so that might be used to hold the shutter open. I had an old Synchro Compur shutter that worked that way, i.e. it had a mechanism to hold the shutter open, it was just pretty well disguised.
