When using a camera like a speed Graphic or whatever with slow film on a cold day when you can't stop shivering to hold the camera steady enough. has anybody heard of some sort of beanbag to lay on top of the tripod head and hand-hold the camera on top of it to help steady the camera a little for the 1/25 speeds and such? Just to keep from having to bolt the camera to the tripod and mess with the adjustments and all that to get aimed.

When I was shooting movies, I would do hand held &, what I called, sandbag cam. I'd put a sandbag on a tripod or an apple box and shoot. I works great, but the bags are usually 25 lbs. or more.
I use an older version of The Pod

These have a 1/4 inch screw. I have a quick release platform on that screw that connects to the Arca-Swiss foot on my camera. It serves all kinds of purposes and would do well what you ask. The pod will screw into the base of your camera, although since I have the quick release foot on my camera, if I use a tripod I really would just use the tripod head.
I used to pack a 1lb rice bag in my 35mm gear tote for steadying the camera hand held, it also worked well for medium format . If you have a tripod sitting there why not just use it? Or maybe drag a monopod along? All my cameras have Arca-Swiss plates attached so I can quickly mount to my pod.
