I would appreciate your recommendations for a book or other resource that provides a thorough presentation on view camera movements - i.e. Scheimpflug, Perspective Control, Understanding Depth of Field, etc.

Thanks all for the terrific recommendations. I've ordered both the "Using the View Camera" by Steve Simmons and "View Camera Technique" by Leslie Stroebel from Amazon. I've got some interesting reading and learning ahead of me.

Stoebel's View Camera Technique is the Bible, but a bit of a slog to get through (really worth it, however). I don't know Steve Simmons book, but suspect it would present much useful information in an easier-to-digest format.
I wrote a primer on field camera movements for the now-defunct View Camera magazine a few years ago. It used to be on their free articles page. It addresses movements and work-around for folding field cameras specifically. If you're interested, PM me and I'll send you a copy.
