I have a 180mm Fujinon which has a copal shutter designated '80'
The one on my 65mm lens is desiganted '55'
I see another one - on a 90mm fujinon - desingated '57'
What do these numbers signify?

Are you referring to numbers printed on the aperture scales rather than directly on the bodies of the shutters? If so, I'd speculate that they're just part numbers for the aperture scale plates.
