I was wonder if and how I could add things like film type, developing method, lens, camera, settings could be added to the metadata of a TIFF scan?
Yes, there are a number of ways of doing this.
Google* for "exif editor".
If you use Lightroom, there are plugins for this purpose.
I use exiftool and exiftoolgui, again a bit of googling will come up with the goods for you on these.

Thanks! I will look for the Lr plugins. I have something called PhotoME but the options to add data fields are greyed out.

I once spent 2 whole days trying to find this on bridge and LR

My favorite simple editing program, which I use when I don't need to open Photoshop, is Faststone. It's free, and does many of the editing things I need to do in full screen mode, with most of the tools on the margins as pop-in windows, the rest available as right-clicks. It's especially good on sharpening and jpg compression, and has all of the basic editing tools. Did I mention that it's free? :-)
When in full-screen editing view, on the right there's a (hidden pop-out) panel for exif editing.

"File" -> "File info..."
Or use the shortcut Ctrl+Shft+Alt+I
There is probably no dedicated box for development data, but you can put it in one of the "description" boxes.
