Will a 210mm Symmar-S on a flat board fold up in a Technika?

No. A 150 will on a 001015 lens board. The 180 Sironar or Symmar also will not fit folded.

Yes, there is a big difference between the two size-wise. The 210mm Symmar-S has an overall length of 73mm, and a front mount diameter of 80mm, whereas the 210mm G-Claron has an overall length of 49mm and a front mount diameter of 51mm (not counting the diameter of the shutter assembly).

I have the Symmar 5,6/210 (60 mm front diameter) on the 5x7 SuperTechnika V (was sold with it) and the problem for the Symmar-S version is the front diameter that not fits on the hole of the base when the camera is closed (it accounts for some mm in lenght). I didn't researched the 4x5" cameras possibilities but only a few lenses that cover 5x7" can be put in the camera when closed.

I don't know if this helps, but I used to be able to close my Tech III with a Fujinon-W 210 mounted.
It was the older Fujinon W, and I think that I had to remove the lens cap in order to make it fit inside and close properly. But it worked.
