Can anyone tell me how to open the Fuji PA145?

If it were a PA 45 I could tell you. The 145 looks rather similar to a Polaroid 405 from what I've seen online. https://www.youtube.com/watch?v=_pPaaD8GEY0

Flip the big black lever outward, it works like a clasp.
Once unlocked, you can open the back like a book. Make sure the dark slide is inserted.
Insert film pack with the white tab away from the dark slide, make sure the black paper sticks out of the slot.
Close the back, snap the black lever to lock the back, and, with a smooth motion, pull the black paper out.
You should now see a white paper tab with the number "1" on it.
You are ready to shoot.

I just got a back and ordered some FP film as well. Can I change film pack in "mid-pack"? e.g. between color and B&W.

Nope.
You have to finish all the ten sheets, or prepare two backs.

Actually, you can change film packs mid-pack, but, in doing so, you will sacrifice the topmost sheet of each pack.

You can swap them out in a darkroom, film changing bag, or tent. Put the partially used pack in a light prof container until you want to use it (I have a couple of backs for Mamiya's that I put partial packs in.) Then you don't lose the top sheet:)
