I picked up a box of darkroom bulk chem, and can't determine what this one bottle is.
The label says.... Dignan Photo Chemical DD-3
4- amino- n- ethyl- n
(B-methanesul - phonyl - amino - ethyl) -
M - toluidine sulfate
monohydrate....
What is it?

The "Dignan" clue in your description would lead me to Patrick Dignan's "150 do-it-yourself BLACK AND WHITE Popular Photographic Formulas" (from the 1970's).
It's in our library, but I bet a lot of people here could refer to their personal copy.
It's a color developer. Look at the chemical name of the Color Developer B here: http://www.freestylephoto.biz/static/pdf/product_pdfs/arista/AristaE6.pdf

BTW, that final sentence for Color Developer B is very frightening.
"Test tasting" may not be a healthy way to investigate after all! ;^)

Well, I wouldn't necessarily want to taste test it, but they seem to apply the same warning to plain old acetic acid - I guess cooking with vinegar will take me to an early grave...
