there's no way I'd give up a copyright merely in return for access.

Neither would I - which is why I said for the right price.

And in general, totally giving up your copyright is bad business practice. But again, I'm speaking in generalities.

If the images are of no further use to you and you can make money out of them by selling the rights, that is a good business practice.

"Intention of use": maybe they will see it as a nice gesture from you, but in fact their agreement is irrelevant. It is your image, the hotel is not in it, so you can do whatever you want with it.

"copyright release": that's the wrong term. This is called a "license". Stating that you can revoke an agreed-upon license is not going to fly.
