My 10x10 Fotar table was modified with t track and was used at a lab that did lots of retouching and dupe work. I need to rebuild the table and will likely leave it out but What would they have used it for? Holding down easels?

Assuming the tracks are on the top...
I expect it was used for clamping an easel in place so each print would be identical.

If you believe you can, or you believe you can't... you're right.
yeah, on top. I'm gonna make a new table since this one has absorbed too much moisture to be flat. Those tracks happen to be the same dimensions as the t-tracks in my router table so I'll save them for my miter saw bench.
To adjust and lock down a roll paper easel.
Focomats used a track to lock down an easel. Maybe the T track is for accurate/repeatable positioning.
