What is the best way to scan a print that is too large for the scanner?

I have a lot of prints that are printed in platinum and are larger than my flat bed scanner. I want to represent them on line or on CDs. What is the best way.
Right now I am trying to use a Nikon D1X digital SLR with a supposedly nice quality Nikkor 85mm lens and shooting like a regular copy with camera on heavy tripod and everything level and square but the quality is not as good as scanning a smaller print on my EPSON 3200. The camera shots aren't as sharp and getting the color right is really difficult.
    what do others do.

    Thank you

You can scan in two parts and photoshop can put it together automatically.

My scanner is a 12x17" and I've done up to 32x40's by stitching them together in PS. Takes six scans all held absolutely parallel. My better process for that large is to photograph them in 11x14" increments (resolution of the digital back at 360 dpi) using a large format camera and digital back and also stitching them in PS. A good way to get your color closer to reality is to shoot one of those three toned grey scales where you know the value for each level and then set your curves accordingly. Mine happens to be set at 20 for black,130 for grey and 245 for white
