Another source of 6/7 black inksets is MIS (http://www.inksupply.com) who market an Eboni 6 set which was designed by Paul Roark. He has also put together suggestions for DIY inksets on his website, some using raw material you can purchase via MIS (http://www.paulroark.com/).
I have used several MIS inksets, albeit none of the more recent ones featuring 6 shades of black/grey, but now use the Piezography K7 inks mentioned earler in this thread. I would recommend them to anyone thinking of persuing this route.

I was using the K7 inkset and very happy with it. The Quadtone RIP ($50) has profiles for K7 inks on various media.
Inkjetmall also has new inks for use on glossy media, but I don't think they have the profiles ready yet.
