I usually load half and half. You never know what's going to be out there, so I always say you should cover all the bases.

For several years, I've shot only Polaroid B&W in my LF cameras.
It will be interesting to myself to discover what I'll do now that they are no longer available (and I have only one box of 52 and one of 55 in the fridge).
For color, I've preferred other formats, including only digital for the last 6 years.

B+W only for my pleasure, but color (and digital color at that) almost exclusively for work.......
I shoot everything I can get my hands on.

I shoot B/W in 4*5 sheet and I shoot color as 6*9 rollfilm.
I shoot both.... some places and light seem to favour one or the other... occasionally I shoot the same photograph in both black and white and colour. Actually after today, I wish I had done it more often. I lost 12 shots because I forgot to add part B to the colour developer... There was more than one tear in my eye as I mourned the images I thought I had.
Some days I see well in black and white, and some days I see well in colour... Though the reality is often dictated to my by the subject and my emotional response to it.
