I always carry holders with velvia, efke 25 and either fp4 or classic pan 400, and infrared. The amount of color present and the lighting conditions determine which I shoot for a given scene. Sometimes I'll shoot both.
I am just starting to enjoy color after 27 years. I am red-green colorblind and color was always a "gift" if I got the exposure right. Last year I learned the color zone system from Rod Klukas, and now my color is bullet-proof. In fact, I showed it exclusively at my LF class final (also taught by Rod). People were quite surprised as I have always shown only BW.

I use to shot both, but these days I leave the color to medium format or digital and do B&W exclusively with my 4x5". I enjoy the whole process more using the zone system and processing the film in my kitchen darkroom. I think it may stem from my love for Polaroid 55. Now that 55 is out-of-production, I dedicate my LF time to developing my skills towards the 55 look. I use to take so much for granted when 55 was available.
In b/w I shoot mostly TMY and in color mostly Fuji Pro 160.
At the moment, exclusively black and white in sheet film, mostly color neg in roll film.
Mostly color transparency and some color neg, depending upon what I need. I also shoot some polaroid B&W...while it lasts. :-(

I cant switch between color to B&W. Now I shoot color. If I decide to shoot B&W again it will take me months to get to the point where I am completely seeing in B&W again.
B&W. Color 8x10 is just too expensive to be any fun (for me, anyway!)

I bring two sets of holders: Either 5x7" for B&W and 13x18cm for colour, or 4x5" for colour and 9x12cm for B&W.
Some scenes work better in colour, the others get shot in B&W.
